Today I present a variation on The Fisherman’s Retreat Edition No. 6 (see review). Here is what they say about it over at The Fisherman’s Retreat:

“Before bottling Edition 6 we transferred 100 litres of the 12 year old spirit from the Rivesaltes cask into a Fortified wine cask from Yalumba vineyard in The Barossa Valley South Australia. The spirit will have been maturing for an extra 22 months in the Yalumba Fortified wine cask and will be bottled at 14 Years old and will be on sale towards the end of May.”

The Edition 6.1 was distilled 2007-05-23, and bottled 2021-05-24. Here is a brief explanation on what Yalumba is (source: Wikipedia):

Yalumba is an Australian winery located near the town of Angaston, South Australia in the Barossa Valley wine region. Yalumba is part of Australian wine alliance Australia's First Families of Wine, a twelve-member alliance with strict membership requirements.”

Nose: Sweeter than its younger sibling. Added wine notes for sure. Feels more sweet and the earth celler is not as dry. Lovely chocolate notes. Wet leaves - rain soaked forest in the late Autumn. With time perhaps a little green as well.

Taste: Full bodied and then some. The red wine finish certainly makes its mark on the palate as well. It feels again sweeter, more fruity and more wine like than its sibling. Very sweet fruit compote, served with dried fruits as garnish, and several glasses of old, dark fortified wine on the side.

Finish: Medium to long finish. Soft pepper notes and hints of more exotic spices. Fizzy sweetness. Dark chocolate. Hints of greener notes towards the end.

Comment: Dark chocolate and red wine. Just add Netflix..
