Finally I get to try new Octomores. The 12.1 is, as with all .1 releases, fully matured in 1st fill American oak ex-bourbon casks. It clocks in at a phenol level of 130.8 ppm.

Nose: Soft and appealing. I cannot see why anyone would find Octomore scary. It’s not a ferocious and bloodthirsty lion, it’s a cuddly Labrador. Creamy vanilla mixed with summer fruits and a fresh citrusy top note. Rich and malty. Oh, and there’s a certain amount of woodfire smokiness as well. Sugary sweet soot and cold ashes. With time cold barbecue smoker.

Taste: Full bodied like the world’s biggest piñata. The smokiness and peatiness is more pronounced on the palate. Dry in character, but not overwhelmingly so. White pepper and soot. Aniseed and ginger. Earthy vanilla. In the background hints of orchard fruits.

Finish: Medium long finish. Remains dark and somewhat ominous. The fruitiness is allowed to come more into the light now. Hints of citrus. Some chocolate and caramel towards the end.
