This is the first single pot still release from Hyde Whiskey. This company sources their whiskey from different distilleries in Ireland. The distillery used to source this single pot still is not disclosed.
The Hyde No. 12 - Pot Still Cask is triple distilled from a mash bill of malted barley, un-malted barley, and Irish oats. It has been matured for at least 5 years in 200 litre, alligator charred, ex-bourbon, casks, and finished in ex-Oloroso sherry casks.

Nose: Mild and fruity, offering a subtle candy store essence. Fresh notes of ripe apple and pear are present, along with hints of fresh herbs. Mild dried fruit notes emerge over time.
Taste: Medium-bodied, featuring a mix of spice and ripe orchard fruit flavors. A creamy texture is accompanied by the sweetness of runny honey.
Finish: Medium-long finish that maintains the honey and simple syrup notes. Fresh orchard fruits and a touch of milk chocolate are also noticeable.
Comment: A decent and enjoyable whisky with a balanced fruity profile.
