Made from 100% rye. They only add a little enzymes on rare occasions, as their production process is well suited for producing the notoriously tricky (sticky) 100% rye.

“[For the] whisky wash we don’t need to use enzymes. The enzymatic power of the rye malt is strong enough to convert to sugar. Due to the fact that we don’t use a lautertun, but a mash filter we are able to brew a 100% rye beer.”

The rye is provided by Dingemans Malt from Stabroek, near Antwerp, Belgium. This whisky is matured for five years in a combination of new oak (a mix of both American and Slovenian oak as with their single malt product), ex bourbon casks, and ex-PX casks.

The Jopen Whisky - Rye is available to buy in Norway at NOK 585 (17404202), and direct from the distillery at €57.

Nose: Rich and creamy with a peppery kick, followed by warm gingerbread cookies. Hints of dried fruits and red berries add a festive touch as it opens.

Taste: Full-bodied with delightful peppery notes and a mischievous edge. Chocolate mousse takes center stage, rounded off with a touch of oakiness.

Finish: Medium-long, with layers of chocolate deepening and a creamy hint of vanilla lingering.
