Rabbit Hole "Dareringer" PX Sherry Finished, NAS, 46.5 %

The Rabbit Hole Distillery was established in 2012. After five years they were bought by Pernod Ricard. This is the first of Rabbit Hole’s products I’ve had a chance to review.

This bourbon was made using a mash bill of 68 % corn, 18 % wheat, and 14 % maltet barley. It has been given a 6 month finish on ex-PX Sherry casks.

This bourbon goes on sale in Norway this coming week at NOK 869 (15433501).

Nose: Dark and mysterious. Dried fruits and some sherry notes straight off. Then creamy vanilla, tobacco leaves, and hints of tropical fruits.

Taste: Medium body. Dry and rather green in character. Cut grass and even some cucumber. Dreid fruits, vanilla and orchard fruits.

Finish: Medium long finish. Sweeter now, and more green. Add to this some caramel and creamy vanilla.

Comment: Unconventional, but fun.
