A Glen Scotia, distilled 2012-06-07, matured in a single 1st fill ex-bourbon barrel, and bottled 2022. Limited to 214 bottles.
“Cheese in a cake, crackers or pickle sandwich, parmesan tuiles, baked feta pasta with olives and capers as we added a few oysters Rockefeller.”
Nose: Earthy vanilla lays the groundwork before an unexpected, but oddly compelling, cheesiness emerges: think room-temp mild blue cheese or mature cheddar. Malty undertones are steady throughout. With time, a gentle swirl of tropical fruits floats in from the background.
Taste: Full-bodied and a bit bold at first, with upfront spice and a saline kick. The cheese character continues; drier now, leaning toward crumbly pecorino or aged manchego. The mouthfeel is both rustic and textured, giving it a charmingly “dirty” vibe.
Finish: Medium-long and persistently spicy. A soft sugary note tempers the heat, while the tropical fruit makes a quiet return. Just before it all fades, a crisp minty note, my mind is drawn to Wilhelmina Pepermunt, leaves a fresh final impression.
Comment: A wild ride from SMWS.
