Matured initially for 7 years in 1st fill bourbon barrels and then finished for two years in 125 litre American oak quarter casks.

Nose: Malty and fruity. Apples and vanilla. With time also tropical fruits like pineapple as well as a guest appearance from the Gingerbread Man (ginger, pepper etc).

Taste: Medium body. Lots of peppery apples notes. Apple wax as well. Very rich fruitiness, almost like apple honey - if that is a thing. There are also tropical fruits here - coconut and pineapple first of all, but also deeper notes of ripe mango.

Finish: Medium long finish. Continues much as it started. With added notes of leather. Perhaps a splash of citrus in the end.
